Homemade Applesauce

With the new crop of apples in at the farmers market, now is the time to make applesauce! It’s easy and delicious and takes very little time. Feel free to use a variety of apples in your applesauce, but be sure to taste for sweetness. The type of apple you use will determine the amount of sugar needed.  If using several apple varieties, try to use a balance of mostly sweet juicy apples, such as Rome Beauties, McIntosh or Fujis and one tart apple, such as a Granny Smith (3 : 1).


INGREDIENTS:


4 apples - peeled, cored and chopped *
3/4 cup water or apple juice
2 tablespoons -1/4 cup sugar (taste for sweetness)
1/4 teaspoon ground cinnamon


METHOD:

In a saucepan, combine apples, water (or apple juice), sugar, and cinnamon. and cook over medium heat for 15 to 20 minutes, or until apples are soft.


Allow to cool slightly, then mash with a fork or potato masher. Taste for sweetness and adjust accordingly.


*If you have a food mill, don’t bother to peel the apples. After the apples are cooked, put the apples through the food mill, which automatically removes the skin.
