Southern Pecan Pie

INGREDIENTS:

3 eggs
1 cup dark Karo syrup
1 cup sugar
2 tablespoons butter, melted
1 teaspoon vanilla
1 1/2 cups pecan havles
Pastry crust in 9 inch pie plate, chilled

METHOD:

Preheat oven to 350°F.

In large bowl, mix eggs, syrup, sugar, butter, and vanilla until well blended. Stir in pecans. Pour into prepared pastry crust.

Bake for 50-55 minutes or until center of pie is “set.” Cool. Serve at room temperature.

SOURCE: This recipe adapted from an old Karo syrup bottle – and is still the best recipe I’ve ever found. Our family has used it for several generations.
